200ml coconut milk 100ml water 1/2 can of sweet corn 25g tapioca 30g sugar
Method :
Soak the tapioca in water for 10 minutes. Boil the water together with the coconut milk and sugar in a saucepan. Stir in the tapioca. Reduce the heat to low and simmer for 1/2 h so that the tapioca softens. Transfer to a bowl and add the sweet corn. Chill in the fridge for 3 hours.
