-18 uncooked king prawns -2 tbsp corn flour -3 eggs -240g breadcrumbs -vegetable oil to fry -60ml soya sauce mix with 1 tablespoon of lime juice
Method :
Shell the prawns whilst leaving the tails intact. Using a sharp knife, open the back of each prawn to form a butterfly. Then, place them between two layers of cling-film. Gently chop the flesh to obtain an escalope. Put the corn flour, eggs and breadcrumbs into separate bowls. Lightly beat the eggs. Roll the prawn escalopes one by one in the flour, eggs and breadcrumbs. Make sure that the each escalope has been well covered with breadcrumbs. Heat the vegetable oil over a medium heat in a frying pan. Genty fry the prawn escalopes for approximately 1 minute on each side until the breadcrumbs are golden brown. Serve at once with the soya sauce mixture.
