Sprig of celery, diced 1 lb (454g) prawns, medium sized and cooked 2 tomatoes, diced 2 tsp (10ml) grated lime zest 2 avocados, sliced 1 tbsp (15ml) lemon juice Mixed green salad
The French dressing: 1/2 cup (125ml) tomato juice 1/4 (65ml) barbecue sauce 1 tbsp (15ml) lime juice 1 tbsp (15ml) vegetable oil 1 tsp (5ml) Dijon mustard 1 tsp (5ml) sugar 1/2 tsp (2ml) dried thyme 1/4 tsp (1ml) pepper
Method :
Cut the prawns into three pieces. Keep 4 whole prawns aside to garnish. Toss in the diced tomatoes, celery and grated lime zest. Mix thoroughly. Lay a bed of mixed green salad on each serving plate. Arrange the slices of avocado around each plate. Drizzle the lime juice over the top. Place the prawn mixture in the middle of the plate. Drizzle the dressing over the prawn mixture. Garnish with a prawn. The French dressing: mix all the ingredients together.
