1 chicken, weighing about1kg juice of 4 limes 1 lime 6 garlic cloves, crushed 2 onions, finely chopped 3 spring onions or 2 shallots 4 sprigs of parsley, chopped 1 sprig of thyme 1 chili, chopped oil, salt and pepper
Method :
. Dice the chicken and, under running water, rub it with the juice of 1 lime that has been cut in half. . Marinate the chicken in the lime juice, crushed garlic, salt, pepper and chopped chili. . Pour a dribble of oil into a saucepan and gently brown all the chicken on all sides. Add the peeled and thinly chopped onions, spring onions, chopped parsley and the sprig of thyme. Stir well so that the meat soaks up the spices and then, add the marinade along with some water. Allow to simmer for about 25 minutes. Serve on a bed of white rice
