-250 to 500g chicken breast or lean pork meat -1 onion -450g (1lb) beans sprouts -2 celery sticks -50g mangetout peas -2 slices of ginger -1 tbsp white wine or rice wine
Method :
Preparation : Cut the chicken or pork meat into equal-sized slices. Add 1 teaspoon of corn flour or manioc flour, 1 tablespoon of soya sauce, 1 tablespoon of white wine or rice wine, 1 tablespoon of oil and salt. Leave to marinate for one hour.
Sauce (1) In a bowl, combine 1/4 cup of water (65ml) together with 1 tablespoon of soya sauce, 1 tablespoon of corn flour or manioc flour and some salt. Note: If you want to have more sauce, add more water and oyster sauce.
Cooking: Step 1: Heat the oil in a wok. Add the 2 slices of ginger, the beans sprouts, the pieces of celery and the mangetout peas. Simmer over a high heat. Pour in 1/4 cup of water (65ml). Cover with a lid for three minutes and set aside. Step 2: Heat the wok over a high heat. Add a drizzle of oil and fry the onions along with the chunks of chicken or pork meat. Turn them over regularly, sprinkle with 1 tablespoon of wine, and pour in 1 tablespoon of oyster sauce and the sauce (1). Simmer for two minutes before adding the vegetables. Stir well. Serve on a bed of white rice.
