-250 to 450 g (1/2 lb) of beef -1 garlic clove, crushed -1 onion, chopped -2 celery sticks, cut into diagonal slices -Green peas -6 to 8 eggs beaten together with 2 tablespoons of oil and 2 tablespoons of soya sauce. -Salt and pepper
Method :
Cut the meat into fine slices. Next, add 1 teaspoon of corn flour or manioc flour, 1 heaped teaspoon baking powder, 2 tablespoons of soya sauce, 1 tablespoon of oil, 2 tablespoons of water and season with salt. Leave to marinate for one hour. Step 1: Heat the wok over a high heat. Add the oil, garlic clove and onion before adding the meat. Turn the meat over (about 3 minutes on each side). Stir in the celery and green peas. Remove from the heat and keep warm. Step2: Pour the eggs into the pan and fry over a low heat until set. Lay the vegetables mixture and the meat in the centre and fold in each end of the omelette. Transfer to a serving dish. Drizzle the sauce over the Foo-yang and serve on a bed of white rice. To prepare the sauce: Stir 1/4 cup of water (65ml) or chicken stock with1 tablespoon of oyster sauce and 1 tablespoon of corn flour or manioc flour in a bowl. Season with salt. Note: if you want more sauce, add more water. Bring to the boil and stir until the sauce thickens.
