600g Chinese egg noodles 600g minced chicken 300g prawns, shelled 3 eggs 2 carrots 1/2 white cabbage 1 chicken stock or 1 tsp glutamate salt oil 4 sprigs of chives soya sauce
Method :
Peel and cut the carrots into sticks. Cut the cabbage into thin strips. Whisk and fry the eggs to make an omelette. Cut the omelette into thin strips. Gently fry the chicken pieces for 10 minutes and then the prawns for 5 minutes. Set aside. Cook the noodles in boiling water with a drizzle of oil and salt, until al dente. Drain. Heat a teaspoon of oil in a wok or a frying pan. Stir-fry the noodles in small heaps for 1 to 2 minutes whilst sprinkling flavoured wine and soya sauce over them. Stir in a small portion of vegetables, chicken, prawns, omelette and chives. Repeat this process until all noodles and vegetables are cooked and serve warm. Finely chopped boiled Chinese sausage can also be added. You can also prepare a garlic sauce to bring out the flavour of the dish. Garlic sauce: combine 2 to 3 finely chopped garlic cloves together with some vinegar and 2 teaspoons of sugar. Sprinkle the garlic sauce over the fried noodles and serve.
